Once again my Mom comes through with a healthy (and yummy!) version of a favorite cookie…
Tonight is our Bible Study and I need a batch of cookies to take along for snack with coffee.
After searching through our recipe file, I found these Healthy Chocolate Chip Cookies.
I made a few changes to the recipe (I tend to do that often when I cook!)
Still, the cookies were easy to make, moist & flavorful!
Healthy Chocolate Chip Cookies
Adapted by Nana Shirley from an Eat Healthy magazine
1 cup whole wheat flour
1 ½ cups white flour
1 teaspoon baking soda
½ teaspoon salt
½ cup margarine
¼ cup ground flax seed
1 tablespoon vanilla
¾ cup brown sugar
½ cup granulated sugar
1 egg
2 tablespoon water
1- 12 oz pkg dark chocolate chips
Cream butter, flax seed and sugars until well mixed. Add egg and vanilla.
In separate bowl, combine flour, salt, and soda. Stir into wet ingredients. Add chocolate chips.
Drop onto greased cookie sheet using a medium-sized melon baller or large spoon. Bake at 375° for 10 minutes. Makes 22 large cookies.
