Butterscotch Cream Cheese Bars

More Bars Both of my parents and most of my siblings are pretty adventurous when it comes to food.

So I always love to try new recipes – especially desserts – when my family comes to visit.

This last trip – when dad and my sister came to help prepare for graduation – was no different.

Even though the larder was pretty empty and our time was short, we were still able to dig up enough ingredients in the pantry and freezer to make these yummy bars.

The combination of butterscotch chips and graham cracker crumbs intrigued me – and of course I love anything with cream cheese!

Butterscotch Cream Cheese Bars

1 cup butterscotch chips
3 tablespoons butter
1 cup graham cracker crumbs
1 cup chopped walnuts
1 package (8 ounces) cream cheese
1/4 cup sugar
2 eggs
1/8 cup flour
1 tablespoon lemon juice

Melt the butterscotch chips and butter. Add the graham cracker crumbs and walnuts. Mix well. Reserve about one cup of the crumb mixture.  Spread the rest of the mixture in the bottom of  an ungreased 9 x 13 pan. Bake 12 minutes.

Beat the cream cheese and sugar. Add the eggs one at a time, beating well after each one. Add the flour and lemon juice.

Pour over the baked crust and sprinkle with the reserved crumbs.

Bake 20-25 minutes.

Cool. Cut into bars and refrigerate.

These are best when eaten after they have been in the fridge for 24 hours.

Bachelor Bars

Here’s a yummy classic from Nana and my youngest sister – who has spent time at Mom’s while her husband is traveling on business! Sure wish I was there too…

bachelor barsOur daughter was baking a cake and had some sweetened condensed milk left. Rather than put it in the refrigerator, where it would probably get lost & forgotten, she whipped up these Bachelor Bars. They are named because easy to make with few ingredients! They look & taste yummy enough to impress anyone! (She halved the recipe and put them in a 8″x 8″ pan.)

Bachelor Bars

  • 1 packet graham crackers
  • 1 stick butter or margarine
  • 1 can sweetened condensed milk
  • 1 cup coconut
  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Melt the butter/margarine. Crush the graham crackers and put in bottom of 9”x13” pan. Pour melted butter/margarine over the crackers, mix and pat into bottom of pan. Pour milk over graham crackers. Pat coconut into the milk. Sprinkle chips over ingredients. Bake 350 ° for 20-25 minutes. Let cool. Bars will thicken as they cool. Cut & serve. Leftovers do freeze well.

Kids In the Kitchen: S`more Parfaits

Mom needed a special dessert made for our company on Saturday, but she was too busy with the painting to make something. So I did! I made these yummy parfaits all by myself. (Well, Buddy did help sprinkle the marshmallows and lick the bowl!)

They were really yummy! Everybody loved them!

S`more Parfaits

2 cups of cold milk
1 package (3.9 ounces) instant chocolate

fudge or chocolate pudding mix

2 cups coarsely crunched graham crackers
(about 24 squares)
1 cup miniature marshmallow
4 tablespoons miniature chocolate chips

Get a bowl and whisk milk and pudding mix for 2 minutes.
Put a small layer of pudding on the bottom of dessert cups or parfait glasses.

Then put a layer of crushed graham crackers.

Spoon another layer of fudge pudding on top of the graham crackers.

Make a layer of marshmallows, followed by a layer of chocolate chips.

Then add another layer of fudge pudding.

Sprinkle some marshmallow and chocolate chips on the top.

Refrigerate till served.

If you are using a bigger glass you can repeat the layers!
