The chickens aren’t laying. I get so spoiled with our fresh free-range chicken eggs that I forget about these 2 months every winter when my biddies go into their moult and stop laying.
Then I realize how many of my favorite recipes use eggs and I run out. That happened this week.
My parents were here visiting and I wanted to make a yummy treat, but realized that I was out of eggs, again. I grabbed my recipe file and started thumbing through looking for something quick, easy, with chocolate and no eggs. I found it!
This recipe is called O’Henry Bars and has a very rich base of oatmeal, butter, and sugar topped with, of course, chocolate! It was quick and easy to make, and quite a hit with everyone.
O’Henry Bars
Mix Together: 4 cups of oatmeal, 1/2 cup white sugar, 1 cup brown sugar, 1 cup melted butter, and 3 tsp. vanilla. Press into a greased 9 x 13 pan and bake at 375 degrees for 15 minutes.
Melt together 6 oz. chocolate chips and 1 cup peanut butter. Spread on warm bars. Enjoy!
I doubled the recipe (yes, that is a lot of butter!) and put them in a 1/2 sheet cake pan. Definitely not a diet bar, but I sooth my conscious with the fact that oatmeal is good for me!
